I highly recommend you buy some basic kitchen utensils. That will make it easier to cook with. A couple of different sauce pans, a couple of different frying pans, a couple of oven pans, and some basic utensils. ( I know you, you probably don't even have this stuff).

I subscribe to e-mealz.com. It cost $15 for a 3 month subscription. Every week they post a menu with easy meals to make( seriously easy, 3-5 ingredients) and they also give you a shopping list. I don't actually cook every night so I only choose 4-5 meals that sound the best. We always have lots of leftovers in the fridge to eat for lunches. There's lots of menu options. I think there is one that is a low fat menu for two people.

ohhh....I got another one.

cook pasta
cook chunks of chicken (buy boneless skinless breasts and cut them into chucks)

When chicken is cooked dump in 1 can rotel, 1 can cream of chicken soup, a little milk and some velveeta.

When it all melts combine the pasta and chicken goo and put it in the oven at 350 F for 35 mins or so.

It turns into a gooey yummy thing.
If you want it spicy...just add peppers or use Rotel hot.
