As I do every once in a blue moon, read rarely, I reflect on my life, where I’m going, and where I’m headed.

So today I made the decision that, after the new year, I’m not going to eat out any more.

As I may have mentioned once or twice before, I can’t cook. If it wasn’t for the micro-oven, as my Grandmother calls the microwave, (Actually, she pronounces it Micra-oven), I would have died a long time ago from starvation. I’m not even kidding people.

So I decided today that I would start cooking for myself and then just save whatever is left over for lunch the next day.

I’ve never found very much joy in eating. I look at it as something I have to do. If I didnt have to do it I probably would never eat.

I mean how hard can baking chicken be, honestly? Turn on the oven, put a chicken breast on a cookie sheet, or pan, or whatever, put it in the oven, set the timer right? Or am I missing something? It really doesn’t have to taste that good which it probably won’t the first couple of times, any way.

That’s all I eat now any way. Chicken sammiches from Wendy’s. (hold that disgusting sauce, please)

I can make mac and cheese, I can cook a freakin’ hot dog. I can make the Worlds Greatest PB&J. I can mix the hot dogs with the mac & cheese. Or I could mix the mac & cheese with chicken and broccoli just like they do at McCoy’s in Westport.

I could have corn with my mac & cheese. I like corn, from a can, or on the cob, I think its one of the best vegetables out there. But I especially like seeing kernels of corn in my turds the next day.

But I’m going to need a few more SIMPLE suggestions for meals. Do you know of any really simple meals that I could toss together? The keywords are REALLY AND SIMPLE. If its going to take more than one pan or more that 10 min then don’t bother suggesting it. I only have one set of pots and pans anyway.

    The easiest meal we do is tortellini and shrimp. If you don’t know, tortellini is basically a ring-shaped, stuffed pasta. You just boil them up. You can throw the shrimp in there with them to make it really simple, or you can cook them in a skillet if you want to properly season them. The wife also mixes in frozen peas.

    I do another thing where I boil some rotini, saute some cut up sausage, peppers and zucchini…then just mix them together and put some sauce on it. It’s easy, quick, and you can’t really mess it up unless you don’t know when something is burning.

    I can teach you some simple, HEALTHY, recipes while we’re there for Xmas. I watch Giada and Ina on Food Netwok, and many of their recipes are easy to follow.

    I find the George Forman Grills to be a really easy and healthy way to cook just about everything. Get the one with removable plates and cleanup is a breeze as well.

    This is gonna be difficult. I highly recommend menu planning. Sit down for 1/2 hour on Sunday and figure out exactly what you are going to make every day that week. Go to epicurious or look in a cookbook for stuff that sounds good. Print out the recipes, make the shopping list, get the stuff. Write down the menu and put it on your fridge.

    Without this preparation it is going to be really tempting to go out or eat hot dogs every freaking day. Otherwise you will be too tired, indecisive or busy to come up with a meal every day.

    My favorite single guy food was lemon angel hair pasta, it takes like 5 minutes to make.

    Boil angel hair pasta (must be angel hair, it takes about 5 minutes to cook). While that’s boiling pour about a 1/2 cup of olive oil in a mixing bowl and cut a lemon in 2. Squeeze one half of the lemon in the olive oil and whisk until blended. Taste. If it needs more lemon squeeze some from the other half of the lemon, if it is too lemony add oil. Strain the angel hair and dump it in the mixing bowl with the oil. Dump some parmesan cheese and basil (fresh is best but dried works) on top. You can eat it out of the mixing bowl.

    The George Foreman ROCKS! Another very simple meal (good and simple) is your classic spaghetti. I think Cascones Original Sauce is the best.

    Get a book, go shopping follow directions, eat.

    Don’t be a pussy, learn to cook and you will never be single!

    I wanna go on record as supporting the Foreman. The newer ones with removable plates are even better than the one I have.

    I dunno how to bake a chicken but drop 2 breasts in a ziplock with some Italian dressing when you go to work and grill em up when you get home. One is dinner the others lunch (sometimes I dice it and make chicken salad).

    I will second the comment from NOLA – Get Giada de Laurentiis’ cookbooks Everyday Italian and Everyday Pasta from the library. When I taught myself to cook, those books were super because 1) they require a minimum of crazy exotic ingredients and 2) Italian food is delicious. Good luck!

    Brown (cook) sausage and hamburger in a pan.
    Drain grease
    dump in Prego or some similar spaghitti sauce stuff.
    cook just a little bit to heat the sauce.
    put on top of Tortilla chips and add cheese.

    eat…

    ohhh….I got another one.

    cook pasta
    cook chunks of chicken (buy boneless skinless breasts and cut them into chucks)

    When chicken is cooked dump in 1 can rotel, 1 can cream of chicken soup, a little milk and some velveeta.

    When it all melts combine the pasta and chicken goo and put it in the oven at 350 F for 35 mins or so.

    It turns into a gooey yummy thing.
    If you want it spicy…just add peppers or use Rotel hot.

    I subscribe to e-mealz.com. It cost $15 for a 3 month subscription. Every week they post a menu with easy meals to make( seriously easy, 3-5 ingredients) and they also give you a shopping list. I don’t actually cook every night so I only choose 4-5 meals that sound the best. We always have lots of leftovers in the fridge to eat for lunches. There’s lots of menu options. I think there is one that is a low fat menu for two people.

    I highly recommend you buy some basic kitchen utensils. That will make it easier to cook with. A couple of different sauce pans, a couple of different frying pans, a couple of oven pans, and some basic utensils. ( I know you, you probably don’t even have this stuff).
