We have a cook book where the basic premise is to make a casserole that you can eat part of and freeze the rest to be reheated another night of your leisure. The two of us only get half way through the amount you eat the first time, so I'm sure you could live a week or two off of one of the recipes.

Ok... you might benefit from a really basic cooking class. It will give you the confidence to make some simple yet great meals. And as a ready reference you'll want the big red plaid book: http://tinyurl.com/5enqk7 It's like the cooking encyclopedia.

But to get you started here are some easy answers:
Boil - bubbles. Rolling boil - tons of bubbles!
Bake - Use oven as usual. Broil - use the setting for the heat element at the top of the oven. It's a very high temp (500 deg.?)
Steaming is when you have a lid on the pot (stovetop); you can get one of those metal basket thingies to let the water heat up and cook veggies, for example, in an indirect way with the steam from the heated water.

If you're wanting to cook healthy and easy, I LOVE my rice cooker. They have some on sale at Target currently (I'm looking to upgrade from my college model!). You measure the rice & water, dump it in, hit the button, and forget it.

Most of all, don't give up. I am still learning to cook and occasionally make hideous nasty things but it's all worth it for the learning process.
